Fusilli Pasta Bake

- 1 Violife Supreme Cheddarton, grated
- 1 pack fusilli pasta
- 2 tomatoes, diced
- 1 Garlic Clove, finely chopped
- 1 onion, diced
- 1 sprig of fresh oregano
- 1 tsp paprika
- 4 tbsp olive oil
- fresh parsley, roughly chopped, for garnishing
- 1 tsp salt
- 1 tsp pepper
- Preheat oven to 200°C.
- Bring a large pot of salted water to boil, and then add your pasta to cook. Make sure you reserve ½ cup of the pasta water and then thoroughly drain.
- In a small pot, heat the olive oil and sauté the onion for 5 minutes, add the garlic and cook for another 5 minutes.
- Add the chopped tomatoes, oregano, paprika and season well. Add a splash of water and simmer on medium heat for 15 minutes.
- Before removing from heat, mix in half of the Violife Supreme Cheddarton grated and stir until melted.
- Place the pasta back in the boiling pot and add in the cheesy sauce with the reserved pasta water, stirring to combine.
- Pour into a large baking tray or skillet.
- Top with the remaining Violife grated and bake for 15 minutes.
- Garnish with fresh parsley and serve.
