  • 1 Violife Supreme Cheddarton, grated
  • 1 pack fusilli pasta
  • 2 tomatoes, diced
  • 1 Garlic Clove, finely chopped
  • 1 onion, diced
  • 1 sprig of fresh oregano
  • 1 tsp paprika
  • 4 tbsp olive oil
  • fresh parsley, roughly chopped, for garnishing
  • 1 tsp salt
  • 1 tsp pepper
  1. Preheat oven to 200°C.
  2. Bring a large pot of salted water to boil, and then add your pasta to cook. Make sure you reserve ½ cup of the pasta water and then thoroughly drain.
  3. In a small pot, heat the olive oil and sauté the onion for 5 minutes, add the garlic and cook for another 5 minutes.
  4. Add the chopped tomatoes, oregano, paprika and season well. Add a splash of water and simmer on medium heat for 15 minutes.
  5. Before removing from heat, mix in half of the Violife Supreme Cheddarton grated and stir until melted.
  6. Place the pasta back in the boiling pot and add in the cheesy sauce with the reserved pasta water, stirring to combine.
  7. Pour into a large baking tray or skillet.
  8. Top with the remaining Violife grated and bake for 15 minutes.
  9. Garnish with fresh parsley and serve.
