- 200 g Violife Epic Cheddar flavour block, cubed
- 400 g kale, stems removed and roughly chopped
- 1 pomegranate, seeds only
- 2 sweet potatoes, cubed
- 50 g golden raisins
- 1 green apple, cubed
- 1 cucumber, cubed
- 1 red onion, diced
- 1 cup cooked quinoa
- coriander leaves
FOR THE DRESSING:
- 3 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tsp vinegar
- 1 tbsp maple syrup
- salt and pepper
- In a salad bowl add the dressing ingredients and whisk to combine.
- Add the kale leaves and mix well until coated in dressing.
- Continue by adding all the other ingredients one at a time. Serve with a sprinkle of coriander leaves and toss to combine. Enjoy!
