Mushrooms Quesadilla

  • 1 pack Violife Just Like cheddar shreds
  • 4 medium flour tortillas
  • 17 oz mix white button and Pleurotus mushrooms, diced
  • 1 medium jalapeno, sliced
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 1 thyme sprig
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • salt and pepper
  1. Heat oil over medium-high heat in a large heavy duty pan.
  2. Add onions, garlic, mushrooms, peppers, and taco seasoning to the pan along with the thyme.
  3. Sautee for 4-5 minutes until golden and season to taste.
  4. Remove mixture from the pan and set aside.
  5. To the same pan, add ½ teaspoon oil and a tortilla, top with a handful of Just like Cheddar Shreds, and 1/2of the mushroom mixture, then top with more Violife Shreds.
  6. Cook on both sides until crispy and golden.
  7. Remove from the pan and repeat with remaining tortillas.
  8. Garnish with jalapenos and serve with guacamole if you wish!
