Mushrooms Quesadilla

- 1 pack Violife Just Like cheddar shreds
- 4 medium flour tortillas
- 17 oz mix white button and Pleurotus mushrooms, diced
- 1 medium jalapeno, sliced
- 1 green pepper, sliced
- 1 red pepper, sliced
- 1 thyme sprig
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- salt and pepper
- Heat oil over medium-high heat in a large heavy duty pan.
- Add onions, garlic, mushrooms, peppers, and taco seasoning to the pan along with the thyme.
- Sautee for 4-5 minutes until golden and season to taste.
- Remove mixture from the pan and set aside.
- To the same pan, add ½ teaspoon oil and a tortilla, top with a handful of Just like Cheddar Shreds, and 1/2of the mushroom mixture, then top with more Violife Shreds.
- Cook on both sides until crispy and golden.
- Remove from the pan and repeat with remaining tortillas.
- Garnish with jalapenos and serve with guacamole if you wish!
