Christmas Tiramisu Glasses

FOR THE CAKE LAYERS:
- 150 g Violife Creamy Original
- 1 cup strong brewed coffee
- ¼ cup Kahlua
- 1 tbsp maple syrup
- lemon zest from one lemon
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- 1 Vegan vanilla cake, cut into chunks
- 1 Canned cherry pie filling
- Cherries to decorate
- cocoa powder for dusting
- In a small bowl add coffee, Kahlua and maple syrup, mix well and set aside.
- To make the filling, place Violife Creamy, lemon zest, maple syrup and vanilla extract in an electric mixer and mix well until creamy and combined.
- To assemble, dip the cake cubes into the coffee mixture and place at the bottom of individual tiramisu glasses. Top with the creamy mixture and then the cherry filling. Repeat the layers, finishing with a layer of creamy filling.
- Dust the top of the tiramisu with cocoa powder and a couple of cherries. Chill in the fridge for a couple of hours and serve!
