For the Cookies:
  • 1⁄2 cup granulated sugar
  • 1⁄3 cup brown sugar
  • 1 egg yolk
  • 1⁄4 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 2⁄3 cups all-purpose flour
  • 1⁄4 teaspoon salt
  • 1 teaspoon baking powder
  • 3⁄4 teaspoon pumpkin pie spice
  • 1⁄4 teaspoon cinnamon
For the Caramel Frosting:
  • 1 Violife Supreme Creamy
  • 3 tablespoons caramel sauce
  • 1 teaspoon vanilla extract
  • 2 tbsp maple syrup
  • Pumpkin pie spice for dusting and any other sprinkles of choice.
  1. Preheat your oven to 170°C. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, use an electric mixer to cream together the butter and sugar, until the mixture is light and fluffy, about 5 minutes.
  3. Beat in the egg yolk, pumpkin puree, and vanilla extract.
  4. In a separate bowl, whisk together the flour, salt, baking powder, pumpkin pie spice, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Scoop the dough into 8 equal portions using a large cookie scoop or spoon. Place the dough portions onto the prepared baking sheet, leaving space between each cookie.
  7. Bake the cookies for 11–13 minutes. Allow the cookies to cool on the baking sheet for 20 minutes before transferring them to a cooling rack to cool completely.
  8. In a medium mixing bowl, use a stand mixer or handheld mixer to beat the softened creamy with the caramel sauce, vanilla extract and maple syrup.
  9. Mix in the caramel sauce, vanilla extract, and powdered sugar. Whip the frosting for an additional 3–4 minutes or until it becomes light and fluffy.
  10. Once the cookies are completely cooled, dollop the frosting on top and smoothen with the back of your spoon.
  11. Lightly dust the frosted cookies with pumpkin pie spice and any other toppings you may like such as nuts or sprinkles.
