FOR THE DRESSING
2 tbsp red wine vinegar
1 tbsp Dijon mustard
3 tbsp extra virgin olive oil
salt and pepper to taste
FOR THE SALAD:
150 g Violife crumbly blue block crumbled
1/2 red onion thinly sliced
2 pears thinly sliced
3 red chicory leaves
1 pomegranate seeds only
a small bunch of flat-leaf parsley leaves picked and torn
- In a bowl, whisk together the vinegar, Dijon mustard, olive oil, and a little seasoning until combined.
- In a salad bowl mix together the onion, pears, chicory, pomegranate seeds and parsley and drizzle with the dressing. Toss to coat and serve.
- Top with Violife Crumbly Blue and enjoy!
