FOR THE DRESSING
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 3 tbsp extra virgin olive oil
  • salt and pepper to taste
FOR THE SALAD:
  • 150 g Violife crumbly blue block crumbled
  • 1/2 red onion thinly sliced
  • 2 pears thinly sliced
  • 3 red chicory leaves
  • 1 pomegranate seeds only
  • a small bunch of flat-leaf parsley leaves picked and torn
  1. In a bowl, whisk together the vinegar, Dijon mustard, olive oil, and a little seasoning until combined.
  2. In a salad bowl mix together the onion, pears, chicory, pomegranate seeds and parsley and drizzle with the dressing. Toss to coat and serve.
  3. Top with Violife Crumbly Blue and enjoy!
