Savoury Pancakes

  • 200 g Violife Epic Cheddar flavour block
  • 6 tsp VIOBLOCK
  • 190 g all-purpose flour
  • 1 tbsp baking powder
  • 2 tbsp granulated sugar
  • 240 g plant-based milk
  • 125 g water
  • 2 tbsp oil
  • A pinch of salt
FOR THE MUSHROOM GYRO:
  • 400 g oyster mushroom
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • salt and Pepper
  • 3 tbsp olive oil
FOR SERVING:
  • Fresh Parsley, roughly chopped
  • 2 medium tomatoes, sliced
  • 1 onion thinly sliced using a mandolin
  1. Shred the mushrooms using your hands. Place into a lined baking tray and sprinkle with spices, olive oil and salt and pepper. Toss to coat evenly and bake in a preheated oven at 180°C for about 20 minutes until crispy.
  2. Cut the Violife Cheddar flavour block into 6 pieces.
  3. In a large bowl whisk together the dry ingredients. Pour in the plant-based milk, water, oil and salt and whisk until combined.
  4. Heat a non-stick pan over medium heat and add 1 teaspoon VIOBLOCK. Add a ladleful of the batter into the pan use the back of the spoon to spread it out, into an even circle.
  5. Place a piece of Violife Epic block into the centre of the batter and top with some extra batter to cover.
  6. Cook until golden brown for about 1-2 minutes and then carefully flip over, cooking for a further 1-2 minutes. Repeat with the remaining batter. You should have 6 pancakes.
  7. To assemble, place the pancake on a plate, top with the mushroom gyro, tomato, onion and parsley and repeat.
  8. Top with another pancake and repeat the filling layers once again.
  9. For each serving you should have 3 pancakes.
  10. Garnish with fresh parsley and enjoy while still warm!
