  • 1 Violife Supreme Cheddarton, grated
  • 2 large potatoes
  • 250g mushrooms, pleurotus
  • 2-3 tbsp Alfredo sauce
  • A pinch of paprika
  • A pinch of oregano
  • Fresh black pepper
  1. Preheat your oven to 200°C.
  2. Place the potatoes in a lined baking tray with oil and a little sprinkle of salt. Bake for 45-50 minutes.
  3. Once potatoes have cooled a little bit, enough to handle, slice in half lengthwise. Scoop the potato filling out of the potato keeping the skin intact. In a bowl mix together the mushrooms, spices, salt and pepper, Supreme Cheddarton grated and Alfredo sauce.
  4. Place the mixture evenly into the potatoes.
  5. Place the potatoes back in the oven at cook for 12-15 minutes or until Violife has melted.
