Vegan Burger

- Violife cheddar flavour slices
- 4 burger buns
- 3 large potatoes
- 2 carrots grated
- 1 leek sliced
- 1 onion, chopped
- 1 garlic clove, chopped
- 4 lettuce leaves
- 2 sliced tomatoes
- fresh basil and thyme, chopped
- 4 tbsps Vegan barbecue sauce
- olive oil
- salt, pepper
- Wash and peel the potatoes, cut into small cubes and boil for 15 minutes until soft. Once they’re soft, drain them, add a dash of olive oil, and mash in a bowl. Meanwhile, heat a little olive oil in a frying pan, and sauté the leeks, carrots onion and garlic until they’re slightly soft. Remove the pan from the heat, and stir in the basil and thyme.
- In a large bowl add the veggie mix along with a little olive oil, salt and pepper to the potatoes and mix them together by hand into a lovely dough-like mix. Form into 4 patties and sauté gently on a medium heat in a little olive oil.
- Lightly toast or grill your burger buns, then spread with a little barbecue sauce. Then stack the lettuce, tomato, your patty topped with a few Violife Cheddar Flavour Slices and crown with a few rings of onions and any leftover herbs.
