INGREDIENTS

1 pack Violife grated original
1 kg potatoes peeled
150 g cherry tomatoes halved
3 tbsp flour
1 tsp salt
2 tbsp olive oil
freshly ground pepper
a handful of fresh basil leaves

Grate the potatoes, place in a clean tea towel and squeeze out the moisture. Place in a large bowl, add the flour and salt and stir. Add the olive oil and form the mixture into a ball shape.
Line a baking tray with baking paper. Spread out the potato mixture into a circle of roughly 20cm diameter.
Place in the oven and cook for 40-45 minutes at 180°C.
Remove from the oven, top with Violife Grated Original and cherry tomatoes and bake for a further 10 minutes until the Violife is melted nicely.
Garnish with fresh ground pepper and basil leaves.
