  • 1 pack Violife grated original
  • 1 kg potatoes peeled
  • 150 g cherry tomatoes halved
  • 3 tbsp flour
  • 1 tsp salt
  • 2 tbsp olive oil
  • freshly ground pepper
  • a handful of fresh basil leaves
  1. Grate the potatoes, place in a clean tea towel and squeeze out the moisture. Place in a large bowl, add the flour and salt and stir. Add the olive oil and form the mixture into a ball shape.
  2. Line a baking tray with baking paper. Spread out the potato mixture into a circle of roughly 20cm diameter.
  3. Place in the oven and cook for 40-45 minutes at 180°C.
  4. Remove from the oven, top with Violife Grated Original and cherry tomatoes and bake for a further 10 minutes until the Violife is melted nicely.
  5. Garnish with fresh ground pepper and basil leaves.
