In a large bowl whisk the flour, sugar, baking powder and salt.
In another bowl whisk the coconut milk, vinegar, Violife Creamy, sunflower oil and vanilla extract. Add the wet ingredients to the dry ingredients and combine to make a batter. Place in the fridge for one hour.
Heat your waffle iron and grease with coconut oil. Place 1 Tbsp of batter into the iron and cook until golden brown.
To make the lemon cream, whisk all ingredients together until smooth. Serve waffles with lemon cream and strawberries or fruits of your liking.
