Vegan Waffles

These vegan waffles taste completely over-the-top! Perfectly made and topped with a delicious lemon cream featuring Violife Creamy Original.

  • ½ pack Violife Creamy Original
  • 250 g plain flour
  • ¾ cups coconut milk
  • 2 tsp baking powder
  • 2 tsp cider or white wine vinegar
  • 1/4 cup sunflower oil
  • 2 tsp vanilla extract
  • 2-4 Tbsp sugar
  • ½ tsp salt
  • ½ pack Violife Creamy Original
  • Juice of 1 Lemon
  • Zest of 1 lemon
  • 1 tbsp maple syrup
  • 1 tsp vanilla
  • Strawberries, to serve
  1. In a large bowl whisk the flour, sugar, baking powder and salt.
  2. In another bowl whisk the coconut milk, vinegar, Violife Creamy, sunflower oil and vanilla extract. Add the wet ingredients to the dry ingredients and combine to make a batter. Place in the fridge for one hour.
  3. Heat your waffle iron and grease with coconut oil. Place 1 Tbsp of batter into the iron and cook until golden brown.
  4. To make the lemon cream, whisk all ingredients together until smooth. Serve waffles with lemon cream and strawberries or fruits of your liking.
