  • ½ Violife Just Like Parmesan
  • 3 medium eggplants, sliced in half lengthwise
  • 0,8 oz panko breadcrumbs
  • 2 garlic cloves, diced
  • 1 tbsp Mediterranean herb mix
  • fresh basil leaves
  • 3 tbsp olive oil
  • salt and Pepper
  1. Preheat your oven to 390°F. Line a baking tray with parchment paper.
  2. Place the eggplants skin side down onto the baking tray.
  3. Drizzle with olive oil, garlic, herbs, salt and pepper and score using a sharp knife. Bake for 20 minutes.
  4. Remove from the oven and add the cherry tomatoes the Violife mozzarella and panko breadcrumbs. Bake for another 10 minutes.
  5. Serve with a sprinkle of Just Like Parmesan grated, fresh basil leaves and serve.
