½ Violife Just Like Parmesan
3 medium eggplants, sliced in half lengthwise
0,8 oz panko breadcrumbs
2 garlic cloves, diced
1 tbsp Mediterranean herb mix
fresh basil leaves
3 tbsp olive oil
salt and Pepper

Preheat your oven to 390°F. Line a baking tray with parchment paper.
Place the eggplants skin side down onto the baking tray.
Drizzle with olive oil, garlic, herbs, salt and pepper and score using a sharp knife. Bake for 20 minutes.
Remove from the oven and add the cherry tomatoes the Violife mozzarella and panko breadcrumbs. Bake for another 10 minutes.
Serve with a sprinkle of Just Like Parmesan grated, fresh basil leaves and serve.
