COOKIE DOUGH:
  • ½ cup Violife Plant Butter Unsalted
  • 3 cups flour
  • 2 large eggs
  • ½ cup pistachio nut butter
  • 1 cup cinnamon or regular pistachios, chopped
  • 2 teaspoons ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 tsp vanilla extract
  • 1 cup sugar
  • â…“ cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp kosher salt
CINNAMON SUGAR MIX:
  • ¼ cup sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  1. In a small bowl, mix the ingredients for the cinnamon sugar mix until evenly incorporated. Set aside.
  2. Now make the cookie dough, in a large mixing bowl, whip the butters with vanilla until light and fluffy.
  3. Add the sugar and brown sugar and mix until well incorporated.
  4. Add the eggs and stir until thoroughly incorporated.
  5. Sift the flour and add the spices, soda & powder and salt.. Combine until evenly mixed. Cover with plastic wrap and chill. Preheat the oven to 375ËšF
  6. Using your hands roll dough into ping pong sized balls.
  7. Dip the dough into cinnamon sugar mixture and roll around covering the dough ball completely.
  8. Place cookie dough on parchment paper-lined baking sheet and bake for 10-12 minutes.

**frosting and more chopped pistachios on top, optional
