- 150 g Violife crumbly blue block
- 2 tbsp Violife vioblock
- 1 onion roughly chopped
- 1 head of broccoli florets
- 2 celery sticks roughly chopped
- 1 large leek roughly chopped
- 4 spring onions roughly chopped
- 1.5 L vegetable stock
- fresh thyme leaves
- salt and pepper to taste
- In a large pot sauté the onion until translucent and fragrant. Add broccoli, celery, leek and onions and stir.
- Slowly pour in the vegetable stock. It should cover the vegetables.
- Bring to a boil and then to a simmer for 20 minutes.
- Season well and use a stick blender to blitz the soup until creamy.
- Serve in deep soup bowls and garnish with Violife Crumbly Blue, fresh thyme leaves and extra seasoning.
- Enjoy while still warm!
