For the sugar cookies:
  • 190g plant butter
  • 2 teaspoons baking powder
  • Plant Butter Unsalted
  • 375g all-purpose flour
  • 200g granulated sugar
  • 1 large egg, at room temperature
  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • Christmas sprinkles of your choice
  • 2 tablespoons milk of choice
For the creamy frosting:
  1. To make the cookies: Preheat oven to 177°C.
  2. Line two large baking sheets with parchment paper.
  3. In a bowl, whisk together the flour, baking powder, and salt. Set aside. In a large bowl, using an electric mixer, beat together the plant butter and sugar until well combined.
  4. Stir in the egg, milk, and vanilla extract until fully combined. Slowly add the dry ingredients and mix until combined. Add some Christmas sprinkles, about 4 tbsps.
  5. Divide the dough in half. Roll out each half on a lightly floured surface to ¼ inch thick for crisp cookies or ⅜ inch for softer cookies. Cut with 5 to 7.5 cm cookie cutters. Place 5 cm apart on a baking sheet.
  6. Reroll any leftover sugar cookie dough and cut out more cookies as needed.
  7. Bake in separate batches at 175°C for 8 to 13 minutes or until the tops of the cookies are lightly browned.
  8. Transfer to a wire rack to cool completely.
  9. Make the frosting by whisking the ingredients in a bowl until creamy and fluffy.
  10. Place in a piping bag and decorate the cookies when cool.
  11. Sprinkle with Christmas sprinkles.
