  • 6 Violife original slices
  • 6 vegan & gluten free burger buns
  • 200 g red lentils, rinsed and drained
  • 2 cups water
  • 1 tbsp oil
  • 1 large onion, diced
  • 3 medium carrots, grated
  • 1 tsp garlic
  • 1 tsp ground paprika
  • ½ tsp ground turmeric
  • ½ tsp ground cumin
  • ¼ tsp cayenne powder
  • ¾ cup rolled oats
  • ½ packed cup coriander, roughly chopped with stems
  • 1 tsp salt
  • salad leaves
  • 6 tbsp cranberry sauce, canned or homemade
  • 1 orange thinly sliced
  1. Cook the rinsed red lentils in a pot with 2 cups water. Bring water to a boil, then lower to a simmer and cook covered for 15 minutes until lentils are soft. Remove from heat and set aside.
  2. Preheat oven to 200°C.
  3. In a small pot over medium heat, cook onions and carrots with oil until soft, about 10 minutes.
  4. Add garlic, paprika, turmeric, cumin, and cayenne powder and stir to cook. Add a splash of water to the pan and let evaporate. Remove from heat and set aside.
  5. In a food processor, add ¾ cup rolled oats until it has the consistency of flour. Add the salt, the carrot spice mixture, and chopped coriander and blitz until a consistent texture. Add the remaining oats and the lentils and stir.
  6. Make patties with your hands and place onto a lined baking sheet, flatten a little with your fingers.
  7. Bake for 15 minutes until the bottoms are browned, then flip and bake for 5 more. Cut your burger buns in half, spreading cranberry sauce to the base. Add the lentil patty, top with a slice of Violife Original, salad leaves, a slice of orange and finally with the top half of the bun.
