Christmas Lentil Burgers with Violife Original slices - easy to prepare for today's festive meal! This special burger is the best family friendly choice!
½ packed cup coriander, roughly chopped with stems
1 tsp salt
salad leaves
6 tbsp cranberry sauce, canned or homemade
1 orange thinly sliced
Cook the rinsed red lentils in a pot with 2 cups water. Bring water to a boil, then lower to a simmer and cook covered for 15 minutes until lentils are soft. Remove from heat and set aside.
Preheat oven to 200°C.
In a small pot over medium heat, cook onions and carrots with oil until soft, about 10 minutes.
Add garlic, paprika, turmeric, cumin, and cayenne powder and stir to cook. Add a splash of water to the pan and let evaporate. Remove from heat and set aside.
In a food processor, add ¾ cup rolled oats until it has the consistency of flour. Add the salt, the carrot spice mixture, and chopped coriander and blitz until a consistent texture. Add the remaining oats and the lentils and stir.
Make patties with your hands and place onto a lined baking sheet, flatten a little with your fingers.
Bake for 15 minutes until the bottoms are browned, then flip and bake for 5 more. Cut your burger buns in half, spreading cranberry sauce to the base. Add the lentil patty, top with a slice of Violife Original, salad leaves, a slice of orange and finally with the top half of the bun.
