In a large bowl, mix all the cookie ingredients. Let the dough sit for 5 minutes and then place in the refrigerator for 30 minutes covered with cling film.
Preheat the oven to 180°C and line a baking tray with baking paper. Use a rolling pin to open the ball of dough. Use a cookie cutter to cut circles and transfer to the lined baking tray. Bake cookies for 10 minutes and let cool on a baking rack.
To prepare the frosting beat the Violife Creamy Original with the maple syrup and vanilla in a mixer until smooth. Add two drops of food coloring of your choice to give a nice pastel color. Place in a piping bag and use to decorate the cookies when cool. Use sprinkles for more decoration.
