Creamy Roasted Tomato Soup with Violife Creamy! Everyone will enjoy this simple to make fragrant tomato soup perfect for the winter. Make your own!

- 1 pack Violife Creamy
- 1 kg cherry tomatoes
- 250 ml vegetable stock
- 2 garlic cloves, whole
- 1 onion, quartered
- 1 tsp paprika
- 1 Large handful of fresh basil leaves
- black pepper
To serve:
- Bread and vegan butter of choice
- Preheat the oven to 200°C.
- Place cherry tomatoes and garlic cloves on a large baking tray with a drizzle of olive oil, salt and pepper.
- Roast for 25-30 minutes until the tomatoes are soft and golden.
- In a large pot, heat some olive oil and sauté the onion for 3-4 minutes. Add the roasted tomatoes, vegetable stock, paprika and bring to a simmer. Add in half of the basil leaves.
- Simmer for 10 minutes and then, using a hand blender, blitz the soup until smooth in texture.
- Add in half of the Violife creamy and stir until combined.
- Serve the soup in bowls with a dollop of Creamy in the middle, fresh basil leaves and freshly ground black pepper.
- Serve with bread and butter!
