Mediterranean Vegetables Skillet
Mediterranean Grill Me Skillet with tomatoes, red pepper and Violife. It's the perfect summer lunch idea, light, colorful and full of flavour!

- 200 g Violife grill me!, in triangles
- 800 g tin chopped tomatoes
- 1 large red pepper diced
- 2 cloves garlic sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp dried chilli flakes
- 1 tsp paprika
- sea salt and freshly ground pepper to taste
- 15 green olives
- 1 tbsp capers
- 1 lemon zesto
- a handful flat-leaf parsley finely chopped
- toasted pita breads to serve
- In a skillet place the tomatoes, red pepper, garlic, olive oil, oregano, chili flakes and paprika and mix well to combine. Season with fresh pepper and sea salt.
- Place in a preheated oven at 200°C for 15 minutes.
- Remove from the oven and top with the Violife Grill Me! triangles, olives and capers
- Place back in the oven for another 25 minutes.
- Grate some lemon zest and sprinkle with parsley.
- Serve with toasted pita breads on the side.
