Mediterranean Veggie Sandwich

Quick, comforting and delicious Mediterranean Toastie! Crispy golden bread topped with grilled Violife Mediterranean style, harissa, tomato & rocket leaves.

  • 200 g Violife mediterranean style grill me
  • 4 tbsp olive oil for frying
  • 40 g plant based butter
  • 4 slices sourdough bread
  • 2 tsp harissa
  • 2 tomatoes sliced
  • 50 g rocket leaves
  1. Heat a griddle pan over medium heat with a drizzle of olive oil and grill the Violife Mediterranean style Grill Me for a couple of minutes on each side until golden. Remove from the heat.
  2. Spread the bread slices with some plant-based butter and toast on both sides until nice and crispy.
  3. Spread one slice of bread with harissa, top with Violife Mediterranean style Grill Me, tomato and rocket leaves and cover your toastie with a slice of crispy toasted bread.
  4. Enjoy warm and toasty!
