  1. Pierce the potato with a fork and cook in the about 8-10 minutes until soft. Alternatively, you can bake it in the oven for 1h at 355ÂşF until it becomes soft. Slice it in half and scoop out the flesh.
  2. Mix the potato with the tapioca starch, milk, harissa and the Violife shreds and knead for a couple of minutes until obtaining a dough. Season with salt to taste.
  3. Transfer the dough to a container or shallow baking dish and press it with a spoon so it has an even surface. The height should be around 1 inch. Cover and allow to rest in the fridge for about 30 min until solid.
  4. Carefully remove from the container and place on a chopping board.
  5. Cut the dough into squares (around 1-1.5 inch) with a knife
  6. Heat a pan with vegetable oil and fry the squares at medium high heat for a couple of minutes until golden on each side.
  7. Transfer to kitchen paper to remove excess oil and enjoy hot. Serve with a dip of your choice!
