INGREDIENTS
DIRECTIONS

1 Violife Epic Cheddar flavor block, grated
1 Violife Just Like Parmesan, grated
1 red pepper, in sticks
1 green pepper, in sticks
1 eggplant, sliced
1 zucchini, sliced
1 red onion, diced
5 oz cherry tomatoes
3 tbsp olive oil
1 tbsp paprika
Salt and freshly ground pepper
1 tbsp dried herbs, basil, oregano, rosemary
5 oz diced tomatoes can
2 garlic cloves, sliced
10 oz pasta of your choice
2 tbsp pesto

Preheat your oven to 370ºF.
Place all the vegetables into a baking dish and drizzle with olive oil and paprika. Season well and bake in the oven for 20 minutes. Remove and add the cherry tomatoes and tinned tomatoes with the herbs.
Bake for another 10 minutes.
Meanwhile cook the pasta according to packet instructions.
Drain the pasta and add to the roasted vegetables. Sprinkle with the grated Epic and mix well to combine. Dollop with pesto and bake for a further 10 minutes.
To serve grate some fresh Just Like parmesan on top and decorate with basil leaves.
Serve warm.
