Street Corn Loaded Violife Fries

STREET CORN:
  • 1 tbsp avocado oil
  • 1 can of corn, drained
  • cayenne pepper
  • salt
  • pepper
CRISPY SWEET POTATO FRIES:
  • 2 sweet potatoes
VEGAN CILANTRO LIME SAUCE:
  • 1/4 cup vegan mayonnaise
  • 1 large lime juiced and zested
  • 1 tbsp cilantro, finely diced and for garnish
TOPPING:
  • 1/3 cup Violife feta style block
  1. Add avocado oil to a pan over medium/high heat then add your corn. Cook for about 3-5 mins until lightly browned. Season with salt, pepper and cayenne to taste. Set aside.
  2. Cut the sweet potatoes into fries and coat with avocado oil on a baking pan. Add salt and pepper to taste. Cook fries in an air fryer until cooked through & crispy. You can also cook them in the oven around 205°C (400 F). Cook until soft on the inside & crispy on the out. Flipping halfway through.
  3. Put your Vegan Cilantro Lime Sauce ingredients into a bowl and mix it well. Set aside.
  4. Chop up your Violife Feta Style Block into small cubes and set aside.
  5. Once your fries are done cooking, transfer them to a bowl. Top with the Street Corn mixture, Vegan Cilantro Lime Sauce, Violife Feta Style, more cilantro & enjoy!
