Street Corn Loaded Violife Fries

STREET CORN:
- 1 tbsp avocado oil
- 1 can of corn, drained
- cayenne pepper
- salt
- pepper
CRISPY SWEET POTATO FRIES:
- 2 sweet potatoes
VEGAN CILANTRO LIME SAUCE:
- 1/4 cup vegan mayonnaise
- 1 large lime juiced and zested
- 1 tbsp cilantro, finely diced and for garnish
TOPPING:
- 1/3 cup Violife feta style block
- Add avocado oil to a pan over medium/high heat then add your corn. Cook for about 3-5 mins until lightly browned. Season with salt, pepper and cayenne to taste. Set aside.
- Cut the sweet potatoes into fries and coat with avocado oil on a baking pan. Add salt and pepper to taste. Cook fries in an air fryer until cooked through & crispy. You can also cook them in the oven around 205°C (400 F). Cook until soft on the inside & crispy on the out. Flipping halfway through.
- Put your Vegan Cilantro Lime Sauce ingredients into a bowl and mix it well. Set aside.
- Chop up your Violife Feta Style Block into small cubes and set aside.
- Once your fries are done cooking, transfer them to a bowl. Top with the Street Corn mixture, Vegan Cilantro Lime Sauce, Violife Feta Style, more cilantro & enjoy!
