For the high-protein creamy Italian dressing:
  • 1 Violife Supreme Creamy
  • 1-2 tbsp milk of choice plus more to thin out if needed
  • 2 tbsp Italian seasoning
  • 1 tbsp lemon juice
  • 1-2 tsp garlic powder
  • 1 tbsp tahini
  • ½ teaspoon onion powder
For the salad:
  • 200g chickpeas, tinned, rinsed and drained
  • 1 large head romaine lettuce, chopped
  • 1 chopped red onion
  • ½ cup sun-dried tomatoes chopped and the oil or use 7 oz olive oil
  • ½ cup Kalamata olives sliced
  • 1 cup croutons use gluten-free if needed
  • Fresh basil leaves for garnish
  1. Make the Creamy Italian Dressing: Combine all the ingredients in a bowl and whisk until creamy.
  2. Assemble the Salad: In a large bowl, add the chopped romaine and chickpeas. Layer on the red onion, sun-dried tomatoes, olives.
  3. Sprinkle with crushed croutons.
  4. Drizzle with the creamy Italian dressing, toss to coat, and serve immediately with fresh basil leaves.
