Vegan Greek Salad
Vegan Greek Salad! Perfect combination of Violife Greek White, cherry tomatoes, cucumber and Kalamata olives. Enjoy as a light meal or side!

- 200 g Violife Greek White (cut in cubes)
- 300 g cherry tomatoes (sliced)
- 1 large cucumber (sliced)
- 100 g Kalamata olives
- 1 medium sized onion (sliced)
- 1 green pepper (sliced)
- 1 red pepper (sliced)
FOR THE DRESSING:
- ½ cup olive oil
- ¼ cup apple vinegar
- lemon juice
- Fresh and dried oregano
- 1 tsp mustard (mild)
- fresh parsley
- salt and freshly ground pepper
- In a mixer blend together all the ingredients for the dressing. In a salad bowl add all the ingredients for the salad and the dressing, and mix thoroughly.
