  • 200 g Violife Greek White (cut in cubes)
  • 300 g cherry tomatoes (sliced)
  • 1 large cucumber (sliced)
  • 100 g Kalamata olives
  • 1 medium sized onion (sliced)
  • 1 green pepper (sliced)
  • 1 red pepper (sliced)
FOR THE DRESSING:
  • ½ cup olive oil
  • ¼ cup apple vinegar
  • lemon juice
  • Fresh and dried oregano
  • 1 tsp mustard (mild)
  • fresh parsley
  • salt and freshly ground pepper
  1. In a mixer blend together all the ingredients for the dressing. In a salad bowl add all the ingredients for the salad and the dressing, and mix thoroughly.
