- 1 Violife Just Like Feta
- 4 corn on the cobs, sliced or 1 can of corn
- 1 red onion, diced
- 1 Jalapeno, diced
- 1 avocado, cubed
- fresh onion / scallion, diced
- 1 lime, juice and zest
- 1 garlic clove, diced
- fresh coriander leaves
- Chilli Flakes, for garnishing
- 2 tbsp olive oil
- salt and pepper
- Heat the olive oil in a frying pan and add the garlic with the corn.
- Sauté for 10 minutes until slightly charred. Season well and remove from heat.
- Prepare all the vegetables and add to a large bowl along with the corn.
- Dress with the olive oil, lime juice and zest and crumble in the Just Like Feta.
- Garnish with fresh coriander leaves, chili flakes and serve.
