  • 1 Violife Just Like Feta
  • 4 corn on the cobs, sliced or 1 can of corn
  • 1 red onion, diced
  • 1 Jalapeno, diced
  • 1 avocado, cubed
  • fresh onion / scallion, diced
  • 1 lime, juice and zest
  • 1 garlic clove, diced
  • fresh coriander leaves
  • Chilli Flakes, for garnishing
  • 2 tbsp olive oil
  • salt and pepper
  1. Heat the olive oil in a frying pan and add the garlic with the corn.
  2. Sauté for 10 minutes until slightly charred. Season well and remove from heat.
  3. Prepare all the vegetables and add to a large bowl along with the corn.
  4. Dress with the olive oil, lime juice and zest and crumble in the Just Like Feta.
  5. Garnish with fresh coriander leaves, chili flakes and serve.
