8 oz Violife Just Like Mozzarella Shreds
28 oz potato, 0.20 inch slices
5 oz chickpea flour
8.8 oz water
1 red onion, sliced
1 cup oat milk
6 tbsp olive oil
Salt to taste
Black pepper to taste
Basil leaves to garnish

Peel the potatoes and cut them in half lengthwise. Slice into ½ cm slices.
In a skillet, heat the olive oil on high heat, add potatoes, onion and salt and fry for 10-15 minutes, until potatoes are soft and golden. Set aside to cool.
In a large bowl add the flour, water, milk, salt and pepper and whisk until combined. Add in the Violife Shreds and stir.
Place the skillet back on medium heat with a dash of olive oil and pour over the chickpea mixture. Cook for about five minutes, until the mixture is no longer runny.
Place a plate over the tortilla and turn it over, cooking for a further 3 minutes.
Garnish with basil leaves and serve. You might want to add some freshly ground pepper to taste.
