Mini beetroot jar salads for your picnics or lunchboxes! A tasty recipe that combines beetroot, cucumber, spinach and strawberries with Violife Greek White.

  • 1 pack Violife Greek White, in cubes
  • 2 cups cucumber, chopped
  • 1 cup beetroot, grated
  • 1 cup cooked quinoa
  • 200 g baby spinach leaves
  • 200 g fresh rocket
  • 100 g sliced strawberries, halved
  • 2 tsp chia seeds
  • ½ cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 tbsp maple syrup
  • ½ tsp sea salt, to taste
  • ½ tsp freshly ground black pepper, to taste
  1. Place all dressing ingredients in a jar and whisk to combine.
  2. In three jars begin to layer your salad. Pour dressing into the base of the jars. Top with quinoa, cucumber, beetroot, Violife Greek White cubes, rocket, spinach and strawberries. Top with a few more Violife Greek White cubes and sprinkle with chia seeds.
