Mini Beetroot Jar Salad
Mini beetroot jar salads for your picnics or lunchboxes! A tasty recipe that combines beetroot, cucumber, spinach and strawberries with Violife Greek White.

- 1 pack Violife Greek White, in cubes
- 2 cups cucumber, chopped
- 1 cup beetroot, grated
- 1 cup cooked quinoa
- 200 g baby spinach leaves
- 200 g fresh rocket
- 100 g sliced strawberries, halved
- 2 tsp chia seeds
FOR THE BALSAMIC DRESSING:
- ½ cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1 tbsp maple syrup
- ½ tsp sea salt, to taste
- ½ tsp freshly ground black pepper, to taste
- Place all dressing ingredients in a jar and whisk to combine.
- In three jars begin to layer your salad. Pour dressing into the base of the jars. Top with quinoa, cucumber, beetroot, Violife Greek White cubes, rocket, spinach and strawberries. Top with a few more Violife Greek White cubes and sprinkle with chia seeds.
