  • 200 g Violife Mozzarella flavour grated
  • 4 Bolillo (Mexican Rolls)
  • 200 g refried black beans
FOR THE PICO DE GALLO SALSA:
  • 3 tomatoes (diced)
  • 1 onion (chopped)
  • 1 Serrano pepper (minced)
  • 1 tsp Cilantro (chopped)
  • salt to taste
  1. To make the molletes, slice the bolillo rolls horizontally in half, spread each half with refried beans and sprinkle with Violife Grated Mozzarella flavour.
  2. Place in a preheated oven at 180°C for 8 minutes or until completely melted.
  3. For the Pico de Gallo salsa, mix the tomatoes with the onion, Serrano pepper, cilantro, and season with salt to taste.
  4. Serve 2 molletes per person and top with Pico de Gallo salsa.
