Into a bowl add strawberries, sugar, lemon zest and juice and stir to combine. Set aside for 20 minutes.
In a food processor blitz the crackers and place in a bowl. Combine with VIOBLOCK.
In a large bowl, whisk together Violife Creamy, with the vegan cream and vanilla extract using an electric hand mixer until fluffy.
To assemble, place two tablespoons of cracker crumbs to the base of 6 glasses or bowls and top with the creamy mixture and some strawberries. Repeat once more and then garnish with some fresh mint leaves.
Place in the fridge to chill for an hour or so and then serve.
