Strawberry Cheesecake Parfait
Strawberry Cheesecake Parfait is the perfect summery dessert to impress everyone! So elegant and creamy yet easy to make with Violife. Incredibly tasty!

- 300 g Violife creamy original at room temperature
- 1/4 cup Violife vioblock melted
- 100 g vegan cream
- 200 g fresh strawberries sliced
- 1/4 cup sugar
- 1 tsp lemon zest
- 1 tbsp fresh lemon juice
- 100 g graham crackers crushed
- 1 tsp vanilla extract
- mint leaves to garnish
- Into a bowl add strawberries, sugar, lemon zest and juice and stir to combine. Set aside for 20 minutes.
- In a food processor blitz the crackers and place in a bowl. Combine with VIOBLOCK.
- In a large bowl, whisk together Violife Creamy, with the vegan cream and vanilla extract using an electric hand mixer until fluffy.
- To assemble, place two tablespoons of cracker crumbs to the base of 6 glasses or bowls and top with the creamy mixture and some strawberries. Repeat once more and then garnish with some fresh mint leaves.
- Place in the fridge to chill for an hour or so and then serve.
